Golden Hamburger Skillet
I'd love to be one of those wonderfully prepared, plan-ahead moms, and sometimes I try, but it often turns out all wrong, leading me back to where I started from. More often than not I am in a rush to get things done, especially when it comes to dinner. Usually I am so hungry when it comes to this meal, I can very easily ruin any efforts I've made all day in the health and fitness department. Preparation with speed is essential at suppertime. That's how I learned the art of the one pot wonder. Just one pot or skillet is all I need. Here's my favorite.
1lb ground beef (I use the leanest that I can find)
1-2 cups brown instant rice
1-2 cans Campbell's Golden Mushroom Soup
3 or 4 slices or 1 cup of your favorite cheese (I like 2% American, the unwrapped slices)
1. In a large skillet, brown your ground beef. If you'd like to sneak in some veggies, you can put a little finely chopped onion in with the meat.
2. Drain the meat if needed. If you buy really lean meat, you may not have to.
3. To the same skillet add rice. Stir.
4. Add the Golden soup with a can of water and stir. Cover and let the rice cook, stirring occasionally.
5. About 7 minutes later, the rice should be tender. Add cheese to the top and let it melt.
6. Enjoy with your favorite vegetable. Yum!
